You go in a journey with this book. The book is beautiful- it starts with an introduction explaining that Georgina grew up eating plant-based for many days of the year due to revolving round the Greek Orthodox calendar. The introduction and introducing texts to the recipes give so much knowledge, it's a fun read as well as gives a craving to start cooking. Each recipe is accompanied with a photo which I think is important.

Thats why i pre-ordered it twice! I love the use of pulses, garlic, lemon and accessible herbs like parsley and corriander.

The recipes feel really authentic and although they are vegan, Georgina Hayden always gives options how you might add dairy or even serve meats or fish with the dishes. Georgina has obviously done so much research to compile all the info and traditions that are in this book you cant help but want to share it. "Nistisima" is a stunning cookbook that shares a great inside into Mediterranean orthodoc lenten culture. Lovingly put together and filled with delicious recipes, can't go wrong.

Tip: start with the Za'atar buns, they'll really surprise you. The little stories with all the recipes are lovely. As someone of Greek Cypriot heritage who recently went plant based this book was highly anticipated and it does not disappoint! G is so talented i think I’d even buy a shopping list if she wrote one.

I buy a lot of cookbooks but very few have inspired me in the way this one has done. They all seem quite simple with most of the ingredients being readily available - more importantly they all look delicious. The book covers traditional Greek such as Dolmades and Briam but also has recipes from Egypt, Syria, Serbia and Ukraine.
